The gay friendly Zambra is the shared vision of partners Peter Slamp and Adam Bannasch. Peter has over 20 years of restaurant experience and arrived here after stops in Florida, Atlanta, Portland and Vail, and adds elements to the restaurant from a varied palette of hospitality experiences.
Our dynamic menu is the passion of Executive Chef Adam. Adam has attained many influences through his training in Europe and New Orleans. Zambra is his modern vision of the tastes and flavors of the western Mediterranean: Spain, Portugal, Gypsy, and North Africa.
Zambra is a supporter of the Asheville Sustainable Agriculture Project. We use all natural meats and local organic produce when available.
As an appropriate accompaniment, we have assembled the region's finest selection of Spanish and New World wines. We have been awarded the Wine Spectator's Award of Excellence and our winelist has been voted the best in Asheville.
The Zambra experience has been featured in Southern Living, on the Food Network and been recognized across the country in publications as diverse as: The New York Times, The Los Angeles Times, the Boston Globe, and the Charlotte News and Observer.
Our dining room, "a kaleidoscope of Spanish and Moorish influences" - "a jewel box" is widely recognized as the area's most beautiful. It is the work of celebrated local artist, Douglas Madaras, and his talented team.
